Apple, Blackberry & Lemon Verbena Jam

Perfect for spreading on toast, crumpets, English muffins, croissants, waffles and pancakes.

Try adding some in your fruit mince and putting in less sugar

Layered in sponge with passonfruit curd and cream

 

 

 

 

 

 

 

Blackberry Vinegar

Use as you would a balsamic.

Toss with roasted vegetables

Deglaze pan juices for a quick sauce for most meats eg chicken, duck, beef, pork, or quail.

Add extra virgin olive oil for a yummy dressing of not only lettuce but brown rice, bulgur or quinoa.

Splash over sauted wild mushrooms and roasted chestnuts toss through spelt pasta. 

Caramalise onions and splash of vinegar serve with steak.

Use as a marinate with oil, herbs, dash of soy, pepper and use for dark meats, eg lamb, goat, beef and cook in a slow oven. 

Rhubarb, Berry & Rose Geranium Jam

So apart from spreading this on toast, crumpets, English muffins or croissants.

Try adding it to Eton mess using yoghurt, meringues, strawberries and chocolate chunks

Sponge layered with jam and custard

Toasted brioche topped with labna and pistachios

With your museli or Bircher with freshly grated apple and yogurt

Top a pavlova with lemon curd and this beautiful jam or little pastry tartlet cases for a quick afternoon tea.

Lastly try with roasted pork or cold turkey.

Try with some creamy blue cheese or lovely soft goats curd

Strawberry Vinegar

Mix 2 parts vinegar with 1 part oil for salad dressing

Smoked salmon or trout

Toss with turkey or chicken, avocado, tomato & leafy  greens for a refreshing salad

Finely dice shallot mix with vinegar serve with fresh oysters

Toss through fresh berries and serve with ice cream

Add a dash to your next pav

Mix with a shot of Vodka, soda, fresh basil, strawberries, and lot's of ice for the ultinate party drink or omit the vodka for a mocktail.

Marinate pork or chicken with oil, herbs, white pepper and cook in slow oven.
